Homemade Buns

It's not everyday people tell you how delicious your buns are....but it can sure happen more frequently if you start making these! ;)
These are great with burgers, bbq, sloppy joes, lunch meats, chicken, jam, you name it!

Homemade Buns
What's In It:
1 c milk
1/2 c water
1 T honey
1/4 c butter
1 egg, room temp
4 1/2 c flour
2 1/4 t instant yeast
1 1/2 t salt
1 beaten egg yolk (optional)
Toppings (optional)

What To Do With It:
Heat milk, water, honey, and butter until butter is melted.  Allow to cool to 120 degrees F.  Carefully mix in egg.

In mixer, combine 2 c flour, yeast, and salt.  Add in milk mixture.  Stir in the rest of flour, 1/2 c at a time.  Beat well after each addition.  
When the dough pulls together (it will form a soft ball - I usually have to add additional flour in order to achieve this), turn it out onto a floured surface and knead for about 5 minutes until smooth and elastic.  Alternately, you could use your kitchen aid's dough hook.  Add a little more flour as you mix until the dough is no longer sticky. 
Divide the dough into 10-16 equal parts depending on how large you want your rolls.  I do 10 rolls at just about 4oz each (I use my scale).
Shape the dough into balls and place on a lined cookie sheet.  Flatten the dough slightly.  
Cover loosely with plastic wrap and allow to rest for 30-40 minutes.
When dough has roughly doubled, preheat oven to 400 degrees F. 
If desired, brush buns with egg yolk and sprinkle with sesame or poppy seeds or salt.
  This was the first time I actually used an egg wash and apparently I just threw in at the pan and hoped it hit a bun. Sheesh.  Also, for the record, when you let your children play with the basting brush...you can't find it when you need it and are going to have to use your hands. :P
Bake for 10-12 minutes or until golden.
