Mug Shots in the Morning


I must confess, I am a Chocolate Chip Cookie Serial Killer.
So this happened a few years back....I made my 8,024th batch of chocolate chip cookies and like all the other 8,023, they were terrible.  They ranged in horribleness from dense hard lumps to flat crisp crackers to weirdly cake-like to just terrible.  Then, to add to my feeling of dejection,

SuperMan (my brother) to me: You can bake everything ....why can you not bake chocolate chip cookies?!

Me (wailing): I DON"T KNOW!!!!

A normal person, would have given up after about 20 tries, not me.  You tell me I can't do something, it is GAME ON.

Now that you know the back story, here is where the cookie recipe in shining armor comes riding in on the steed.  :)

I have yet to mess up these chocolate chip cookies and I've been baking them for about 9 years.  They consistently turn out just crispy on the edges and so soft in the middle.  If I can do it, so can you! :)


Chocolate Chip Cookies
What's In It:
1/2 c oats
2 1/4 c flour
1 1/2 t baking soda
1 t salt
1/4 t cinnamon
1 c butter, softened
3/4 c brown sugar
3/4 c white sugar
1 1/2 t vanilla
1/2 t lemon juice
2 eggs
2 1/2 c chocolate chips
1 c nuts (optional)

What To Do With It:
Grind oats using a mortar and pestle, food processor, or coffee grinder*. 
Cream butter, sugars, vanilla, and lemon juice.  
Add eggs one at a time, mixing well after each.  
Add baking soda, salt, cinnamon, and oats.  Mix well.  
Add flour slowly.  
Stir in chocolate chips by hand.  
Chill completely.  At least 4 hours.
Preheat oven to 350 degrees F
Scoop 1/4c balls of cookie dough onto baking sheet lined with parchment paper or baking mat.  
You do not need to flatten the mounds of dough.
Bake 16-18min or until the edges are browning.  
Allow to cool on sheet for a moment or two.  Then transfer to cooling rack. 


P.S.  These make KILLER ice cream cookie sandwiches.  I can vouch for both butter pecan and vanilla ice cream.  But I've been dying to try a mocha flavor as well. You're welcome ;)

*I use my coffee grinder or my mortar and pestle since my food processor is too big.
